Rocket and walnut pesto
A cheaper alternative to a classic basil and pine nut pesto, although if you prefer the original, replace the rocket and walnuts with the same quantity of the original ingredients. Great as a spread, with pasta or gnocchi
- Roughly chop everything and whack all of the ingredients except the parmesan into a blender, with a bit of salt, and blend until relatively smooth
- Add the parmesan, leave for a bit, and season with salt
